During growing season in the Northeast we source our produce from organic farms located in Southern Vermont and Western Massachusetts. They all employ practices that tend to the soil and its environment with the utmost care and respect.

We use an array of 120 liter Speidel fermenting vessels, considered one of the best in the world. Sure, it's a step up from our trusted 20 liter crock, but not that much. The scale of the process remains the same.
