During growing season in the Northeast we source our produce from organic farms located in Southern Vermont and Western Massachusetts. They all employ practices that tend to the soil and its environment with the utmost care and respect. 

Our salt comes from Poland where it's been mined continuously for over 800 years

A remnant of an ocean that evaporated 250 million years ago, it varies in color and micro element content depending on the vein being mined. Left in its natural state, it is crushed and milled mechanically without use of any chemicals.

Then it is fermented in really small, tiny micro-batches

We use an array of 120 liter Speidel fermenting vessels, considered one of the best in the world. Sure, it's a step up from our trusted 20 liter crock, but not that much. The scale of the process remains the same.

The recipe is simple: a perfect balance of all the ingredients that are properly cut and layered. That's all. We only add an appropriate time, temperature and patience.
